Soya chunks -10 to 12
Onions - 2
Tomatoes -2
Ginger and garlic paste - 2 tspn
Chilli powder - 2 tspn
Garam masala powder - 1 tspn
Dhania powder -1 tspn
Jeera powder -1 / 2 tspn
Kasuri methi -1 tspn
Amchur powder -1 / 2 tspn
Salt to taste
Green chillies -3
Chopped pudina and coriander -2 tblspn
Curry leaves -few
Curds -2 tblspn
Oil -1 tblspn

Method
Firstly soak the soya chunks in water for 10 min. than cook the chunks for 10 min. with salt , chilly powder and water. Keep these ready.
Take a pan add oil to that add curry leaves and fry till it becomes crunchy take it out and keep aside it will be used for garnishing, than add onions and fry till it turns color than add ginger and garlic paste and fry for 1 min. Than add green chillies, pudina and coriander chopped (preserve little pudina and coriander ). Fry than add tomatoes and fry till it becomes soft add salt .
Once the tomatoes become soft add spices powder according to your taste , chilly powder, dhania powder, jeera powder, garam masala powder, kasuri methi and amchur powder fry all these for a minute. Add curds and mix and fry for a minute again now add soya chunks and mix nicely let it cook for 4 to 5 min. in a low flame. Than sprinkle little water and cook the soya chunks for 6 to 7 min. (These step is really - really very important, you have to cook the soya for 6 to 7 min. to observe the spices otherwise it will be bland ) . Sprinkle pudina and coriander and mix. Transfer the soya chunks on plate and garnish with curry leaves. It can be used as a starter.
